Originally from Santa Barbara, and making his
way to Maui via Catalina Island, Nick brings
over 10 years of his powerful culinary creativity
to Mark Ellman's three signature, oceanfront
restaurants. His passion for seafood is evident in their
signature Dore Style Fresh Fish - it's about the most delicate and delicious
tasting dish we've ever had. Shallow poached in white wine, and served with a
Dill Pollen Caper Sauce, quinoa and fresh veggies, it's not to be missed. And for
dessert you can't go wrong with an order of their freshly baked Salted Caramel
Macaroons from Honu's in-house bakery (gluten free & served at all three
restaurants). So our hat's off to you Nick... congratulations on winning this
year's Chef of the Year in Maui Magazine - you definitely deserve it!
