One of Hawaii's most creative & celebrated
chefs, Mark is the quintessential
epicurean, constantly pushing the
boundaries of culinary innovation. Take
for example his Ahi Bruschetta - you won't
find another one like it . He starts by baking fresh, whole grain bread,
lightly grilling it with butter (crisp yet still soft), and then layering fresh
edamame puree, ripened yellow tomato slices, lightly seared ahi, topped with
island-grown micro greens, and drizzled with extra virgin olive oil and balsamic
vinegar - it's impossible not to savor every bite! He puts his heart into every
dish served. And rumor has it he's opening up a new restaurant on Maui soon...
