FRIDA'S: Ceviche Tostada 1 lb fresh, skinless Opakapaka, cut into 1 / 2 " cubes 1 1 /2 cups of fresh lime juice 1 med. white onion, chopped into 1 / 2 " pieces 2 medium-large tomatoes, chopped into 1 / 2 " pieces 2 fresh jalapeños, chopped 1 /3 cup chopped cilantro, plus a few leaves for garnish 1-2 tbsps extra-virgin olive oil 3 tbsps fresh orange juice or 1 / 2 tbsp sugar 1 large or 2 small ripe avocados, peeled, pitted & diced salt to taste • tostadas, tortilla chips or saltine crackers Combine fish, lime juice & onion. Use enough juice to cover the fish & allow it to float freely; too little juice means unevenly "cooked" fish. Cover & refrigerate for about 4 hrs. until a cube of fish no longer looks raw when broken open. Drain in a colander. In a large bowl, mix the tomatoes, green chiles, cilantro & olive oil. Stir in the fish & season with salt, usually about 1 / 2 tsp. Add the orange juice or sugar. Cover & refrigerate if not serving immediately.
